How We Use It For Dinner
You can follow the dinner ideas below, or simply let everyone build their own dinner. Tacos, burritos, protein bowls, and salads all use the same ingredients, which makes this an easy family-style meal. Just set out the toppings and let everyone create their own plate.
Of course, the little kids usually need a little help with assembly. Quesadillas take a little extra prep since youβll need to heat a skillet or griddle to melt the cheese and warm the tortillas, but the whole process only takes about five minutes.
In our house, the first night the crockpot salsa chicken is ready we have a choose-your-format dinner night. Everyone picks what they want β tacos, burritos, bowls, salads, or quesadillas β using the same ingredients.
After dinner, I store the remaining chicken and use it the next night to make Healthy Chicken Taquitos. My taquito recipe includes extra seasonings if youβre using plain chicken, but this salsa chicken already has plenty of flavor. I usually just add the chicken and cheese, roll them up in tortillas, spray lightly with avocado oil, sprinkle with kosher salt, and follow the same baking instructions.

If dinner feels overwhelming, rotate one crockpot meal into your week. It doesnβt always have to be salsa chicken, but having one slow cooker dinner planned removes decision fatigue and guarantees one easy night.
I personally love a crockpot meal on Wednesdays because the middle of the week tends to be the hardest. By then weβre usually running low on the meat we prepped on Sunday and ready for something fresh that doesnβt require much effort.

Crockpot Salsa Chicken
Equipment

Ingredients
- 6 lbs organic chicken breast
- 1 32 oz jar of salsa
- 2 tbsp taco seasoning (optional but good)
Optional Add-Ins (stir in after cooking)
- 1 can black beans (rinsed)
- 1 can corn (rinsed)
