Crockpot Salsa Chicken (Easy 3 Ingredient Dinner)

Some nights dinner needs to cook itself. This easy crockpot salsa chicken is one of my favorite busy mom dinners because it uses just three ingredients, takes about two minutes to start, and turns into tacos, bowls, salads, or quesadillas all week.

I rotate this recipe in my 5-dinner weekly system because it’s simple, high-protein, and completely family-approved.

How We Use It For Dinner

You can follow the dinner ideas below, or simply let everyone build their own dinner. Tacos, burritos, protein bowls, and salads all use the same ingredients, which makes this an easy family-style meal. Just set out the toppings and let everyone create their own plate.

Of course, the little kids usually need a little help with assembly. Quesadillas take a little extra prep since you’ll need to heat a skillet or griddle to melt the cheese and warm the tortillas, but the whole process only takes about five minutes.

In our house, the first night the crockpot salsa chicken is ready we have a choose-your-format dinner night. Everyone picks what they want β€” tacos, burritos, bowls, salads, or quesadillas β€” using the same ingredients.

After dinner, I store the remaining chicken and use it the next night to make Healthy Chicken Taquitos. My taquito recipe includes extra seasonings if you’re using plain chicken, but this salsa chicken already has plenty of flavor. I usually just add the chicken and cheese, roll them up in tortillas, spray lightly with avocado oil, sprinkle with kosher salt, and follow the same baking instructions.

  • 2 tbsp taco seasoning (optional but good)
