Sheet Pan Chicken Sausage & Vegetables

Do you ever have those nights where you want a delicious healthy meal, but you don’t want to work to hard to get it? That is where this Sheet Pan Chicken Sausage & Vegetables comes in handy.

It’s 4 PM and you don’t know what to make for dinner? But you remember that you purchased those DELICIOUS Costco Chicken Sausage links. And you have some peppers, onions, and potatoes. Mama, you got this!

Get to slicing and dicing, which can be relaxing at times. It’s also easy to step away from if you have to run a toddler to the potty really quickly. Slice up all your vegetables and your chicken sausage.

Once everything is chopped and spread out over the sheet pans, add your olive oil, seasonings, and grate some fresh Parm over top. Pop it in the oven, and you’re good to go. Play with your kids for a bit while it cooks, or sit down and read your book for a minute. In about 25 minutes your Sheet Pan Chicken Sausage & Vegetables will be ready.

Sheet Pan Chicken Sausage & Vegetables

You can use whatever type of chicken sausage you prefer. My current favorite is the Black Pepper & Parmesan Chicken Sausages from Costco. They have great macros and are delicious.

The first time I made Sheet Pan Chicken Sausage & Vegetables, I just used onions and peppers, and I served it over rice. It also would have tasted phenomenal over some protein pasta and a marinara sauce.

The second time I made this, I added some potatoes and didn’t make the rice. Also delicious. If my family liked zucchini, I would try it with onions and zucchini, and I can only imagine how yummy it would be. The possibilities are endless with this base.

Meal Prep Ready

This is another one of those meals that reheats well. It tastes just as good on day 2 as it does on day 1. So, make an extra-large batch one night, and then you can feed your family and prep some extra lunches for the week.

The best part of this recipe is the fresh Parmesan. So, PLEASE do not buy the Parm dust or the pre-shredded cheese. Splurge on a block of Parm (which lasts forever, to be honest) and get yourself a nice grater. Grate it on top before you put it in the oven and after you plate.

Sheet Pan Chicken Sausage & Vegetables with Rice

This quick and easy healthy dinner is a new family favorite. It comes together so quickly and is packed with flavor.

Equipment

  • 1 sheet pan
  • 1 Silicone Mat
  • 1 pot
  • 1 knife
  • 1 cheese grater

Ingredients
  

  • 2 lbs chicken sausage links
  • 2 cups cooked rice
  • 2-3 bell peppers
  • 1 red onion
  • 2 cups sliced potatoes or zucchinis
  • olive oil
  • italian seasoning
  • garlic powder
  • salt
  • pepper
  • parmesan cheese freshly grated is best

Instructions
 

  • Preheat oven to 425°F
  • Slice your sausage and your vegetables. (You can swap out whatever kind of vegetables you like)
  • Spread your sausage and veggies across the sheet pan, make sure it is even.
  • Drizzle with olive oil and then sprinkle with your seasonings to taste.
  • Grate some fresh parmesan.
  • Roast for 25-30 minutes, stirring halfway.
  • Serve over rice.

Notes

I made this with just peppers and onions.  Some chopped baby potatoes would be yummy with this, or some carrots or zucchini.  Use whichever vegetables you and your family like.
