Sheet Pan Chicken Sausage & Vegetables with Rice
This quick and easy healthy dinner is a new family favorite. It comes together so quickly and is packed with flavor.

1 Silicone Mat

1 knife
1 cheese grater
- 2 lbs chicken sausage links
- 2 cups cooked rice
- 2-3 bell peppers
- 1 red onion
- 2 cups sliced potatoes or zucchinis
- olive oil
- italian seasoning
- garlic powder
- salt
- pepper
- parmesan cheese freshly grated is best
Preheat oven to 425°F
Slice your sausage and your vegetables. (You can swap out whatever kind of vegetables you like)
Spread your sausage and veggies across the sheet pan, make sure it is even.
Drizzle with olive oil and then sprinkle with your seasonings to taste.
Grate some fresh parmesan.
Roast for 25-30 minutes, stirring halfway.
Serve over rice.
I made this with just peppers and onions. Some chopped baby potatoes would be yummy with this, or some carrots or zucchini. Use whichever vegetables you and your family like.
