Cookies are for closers.  That is what Boss Baby says.  I’ve seen that movie so many times that I can’t think of cookies without saying that line. But besides that?  The cookie emoji – it’s a chocolate chip cookie.  She is a classic.  And a favorite for a good reason, and I have the best chocolate chip cookie recipe for you – and you are going to love it! 

Best Chocolate Chip Cookies

I took my family’s chocolate chip cookie recipe, and I’ve made some changes.  I took out the shortening because we try to stay away from vegetable oil and other seed oils as much as possible, and I added extra chocolate chips.

Why limit shortening?

Shortening is primarily made from vegetable oil that has been highly processed to be solid at room temperature.  Butter is 80% fat and the rest water. In contrast, shortening is 100% fat, high in calories, and has very few vitamins and minerals.  Research on rats has shown that reducing consumption can lead to increased inflammation and promote fatty liver disease, among other effects, as reported in this Healthline article

This cookie is so good.  It comes together so quickly that you can easily whip these up and have them in the oven and baked in less than 30 minutes.  I usually made a quad-batch.  I am crazy like that – and I love to share these with friends.  They are also great in the freezer.  Especially if you live in a desert, like I do.  You think you are saving those cookies in the freezer until you’ve finished eating all the ones on the counter, but after being in the hot sun, taking a cookie out of the freezer to eat is incredibly satisfying.

Equipment

  • 1 Kitchen-Aid
  • 1-2 Cookie Sheet
  • 1-2 silicone pad
  • 1 Cookie Scooper
  • 1 Measuring Cups
  • 1 Measuring Spoons
  • 1 cooling rack
  • 1 spatula

Ingredients
  

  • 1 cup butter
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2.5 cups flour
  • 1 tsp soda
  • 1 tsp salt
  • 12 oz chocolate chips or more – I don't measure this 🙂

Instructions
 

  • Preheat oven to 350 degrees F.
  • Cream butter and sugars together in a KitchenAid.
  • Add eggs and vanilla. Mix.
  • Add flour, soda, and salt. Mix.
  • Add chocolate chips until you have enough 🙂 Mix on lowest setting while you pour them in.
  • Using cookie scooper, scoop out cookies and place on silicone mat. 3 x 5.
  • Bake for 10 minutes at 350 F
  • Cool slightly on the pan, and then remove to wire racks to cool completely.

Notes

Measure chocolate chips with your heart. 
Ovens differ, so check your cookies.  For a crispier cookie, let them sit on the pan longer; for softer cookies, remove to a cooling rack quickly.

After 25 years of making this recipe, here are some of my not-so-secret tips to ensure the best cookie every time. 

  • Measure all your ingredients precisely EXCEPT for chocolate chips—those you measure with your heart.  This is where the jumbo bag from Sam’s Club or Costco comes in handy.  You just pour until you see the cookie-to-chocolate ratio to your liking.
  • Sometimes the bottom of the mixer doesn’t get enough chocolate chips, instead of just scooping out cookies with one chocolate chip in them.  Stir in more chocolate chips as you near the bottom of your bowl.
  • If you use a regular cookie scooper, these should be done in around 10 minutes.  On hotter days, I can pull the cookies out after 9.  So look at that first batch and adjust your time as necessary.
  • The cookies will still cook in the pan when you pull them out.  If they are looking a little crispier, move to the cooling rack sooner.  If they appear soft, let them rest on the pan for 1-2 minutes before transferring them to the cooling rack.

These are some of the best chocolate chip cookies you will ever make.  It is a straightforward recipe and it’s just perfect in every way.  I experiment with this recipe as I bake, adding different flavors of chocolate chips or M&M’s.
