Julie's Easy Fudgy Brownies (Made with Brownie Mix)

These easy fudgy brownies start with Ghirardelli brownie mix and a few easy swaps to create thick, chewy brownies that taste homemade. Perfect for parties, holidays, or an easy weeknight dessert.

Ingredients
  

  • 2 Ghirardelli brownie mix boxes or 2 brownie mix bags from a large Costco or Sam's Club box
  • cup melted butter
  • cup milk
  • 2 eggs

Optional Mix Ins

  • Chocolate chips
  • Butterscotch chips
  • Chopped nuts
  • Cookie dough
  • M&M's
  • Oreos

Instructions
 

  • Preheat your oven to 325°F. Spray a 13x9-inch baking pan with cooking spray and set aside.
  • Mix the batter. Pour both brownie mix bags into a large mixing bowl. Add the melted butter, milk, and eggs.
  • Stir until combined. Start mixing slowly so you don't end up with brownie mix all over your kitchen. Once the batter starts coming together, you can mix more vigorously. Be sure to scrape the bottom and sides of the bowl so there aren't any dry pockets of brownie mix hiding underneath.
  • Fold in your mix-ins. Gently stir in chocolate chips or any other mix-ins you'd like to use.
  • Transfer to the pan. Pour the batter into your prepared baking dish. If you're using mix-ins, sprinkle a few extra on top before baking for that bakery-style look.
  • Bake for about 50 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs. It shouldn't come out with wet batter, but it doesn't need to be perfectly clean either. Every oven is a little different, so start checking at the lower end of the baking time and add a few extra minutes if needed.
  • Cool before slicing. Let the brownies cool for at least 10–15 minutes before cutting. They'll slice more cleanly the longer they cool—but if you're anything like my family, someone will be grabbing a warm brownie long before then. 🤍

  • I use Ghirardelli Chocolate Supreme Brownie Mix, but any high-quality chocolate brownie mix will work.
  • Swap the oil called for on the box with melted butter and use milk instead of water for a richer flavor.
  • Don't overbake! A toothpick with a few moist crumbs is the secret to fudgy brownies.
