Equipment

  • 1 baking sheet
  • 1 skillet
  • 1 cutting board
  • 1 knife
  • 1 vegetable peeler

Ingredients

  • 3-4 medium russet potatoes diced
  • 1 1/2 lb ground beef
  • 1 onion medium
  • 8 oz mushrooms sliced
  • 1/2 packet Kinder's Au Jus Gravy Mix
  • Shredded Mozzarella Cheese as desired
  • Queso Cheese Sauce as desired
  • Cripsy French fried onions as desired
  • Kinder's The Blend Seasoning to taste
  • Worcestershire sauce to taste
  • cooking spray
  • spicy ranch optional

Instructions

  • Preheat the oven to 400°F. Dice the potatoes into bite-sized pieces and spread them in an even layer on a large baking sheet. Lightly coat with cooking spray and season to taste.
  • Roast the potatoes for approximately 25 minutes, or until tender with crispy, browned edges.
  • While the potatoes are roasting, add the ground beef to a large skillet over medium-high heat. Season to taste and cook until browned and completely cooked through. Drain any excess grease.
  • While the beef cooks, add the sliced bell peppers, onions and mushrooms to a separate large skillet. Lightly coat with cooking spray or oil, season to taste and sauté until tender and lightly browned.
  • Add the cooked vegetables to the drained ground beef. Stir in the au jus seasoning and a drizzle of Worcestershire sauce. Cook for another 1–2 minutes, stirring until everything is hot and well combined.
  • Divide the roasted potatoes between six bowls. Top each with the cheesesteak beef and vegetable mixture, shredded mozzarella, a drizzle of queso and crispy French fried onions.
  • Add spicy ranch, hot sauce or your favorite additional toppings if desired.

Notes

For crispier potatoes: Use just enough spray oil to lightly coat the potatoes. Too much oil can keep them from getting as crispy.
Mushrooms: Feel free to add more! I originally tested this with about five mushrooms, but they were such a hit with my family that I'll use more next time.
Seasoning: Season the beef and vegetables separately as they cook. Keep in mind that the au jus seasoning also contains plenty of flavor, so taste before adding additional salt.
Make it your own: Adjust the cheese, queso and toppings to your family's preferences. Spicy ranch, hot sauce or extra queso would all work well.
