Fudgy brownies have a richer texture because they use a little more fat, a little less flour, and aren’t baked quite as long. That’s exactly the texture we’re going for here—soft, chewy, and perfectly gooey in the center with those irresistible chewy edges.

The Secret to Better Box Brownies

Just because I call these homemade brownies doesn’t mean we’re making them completely from scratch. Honestly? I don’t think you need to.

If a brownie mix already tastes great, I’d rather spend my energy making it even better than measuring cocoa powder and flour from scratch.

My brownie philosophy is pretty simple:

  • Buy a quality brownie mix.
  • Make two boxes instead of one for thicker, fudgier brownies.
  • Swap the oil for melted butter.
  • Use milk instead of water for a richer flavor.

Trust me… people will swear you made them from scratch.

How to Make Homemade Brownies

Step 1 — Prep the Pan

Preheat your oven according to the directions on the brownie box and generously spray a 13×9-inch baking pan.

I’ve been using avocado oil spray lately, and it works great without changing the flavor of the brownies.

Step 2 — Mix Everything Together

I could tell you to mix the dry ingredients first and then slowly add the wet ingredients… but that’s not how I actually make these. 😂

I dump both bags of brownie mix into a large bowl, add all of the wet ingredients, and mix everything together with a big wooden spoon until it’s well combined.

Step 3 — Fold in Your Mix-Ins

If you’re adding chocolate chips, cookie dough, nuts, or anything else fun, gently fold them in at the end.

As Moira Rose would say…

“You just fold it in.”

I also like to save a small handful of whatever I’m mixing in and sprinkle it over the top before baking. It makes the brownies look a little prettier with almost no extra effort.

Step 4 — Bake Until Just Set

Bake according to the directions on your brownie mix for a 13×9-inch pan.

When the timer goes off, check the center with a toothpick. It’s perfectly okay if it comes out with a few moist crumbs attached—that’s exactly how you get fudgy brownies. You just don’t want it to look like raw batter.

My biggest brownie tip?

You can always bake them a little longer…

…but you can’t un-bake a burnt brownie.

I always start with the shortest bake time on the box and add a couple of minutes if needed.

Tips for the Best Fudgy Brownies

Don’t Overbake

The number one mistake people make is overbaking brownies.

I always start with the lowest bake time listed on the box and check the center with a toothpick. If it comes out with a few moist crumbs, they’re ready. If it still looks like raw batter, give them another minute or two.

Remember…

You can always bake brownies longer, but you can’t un-bake a burnt brownie.

Don’t Cool Them on the Stove 😂

Okay… learn from my mistake.

If you’re making dinner while the brownies are baking, move the pan to a cooling rack instead of leaving it on the stovetop.

Ask me how I know.

I accidentally turned on the wrong burner, didn’t notice for about 30 seconds, and basically toasted the bottoms of my brownies. 😭

We still ate them… they had a very “slightly overdone s’mores marshmallow” vibe… but I wouldn’t recommend it.

Let Them Cool Before Slicing

Technically…

You should let brownies cool completely before slicing if you want perfectly clean squares.

Realistically?

We’re waiting about five minutes before someone in my house is cutting into them.

A warm brownie is absolutely worth the messy slice.

If you want picture-perfect brownie squares, line your pan with parchment paper before baking.

Use a Quality Brownie Mix

This recipe starts with a brownie mix, so choose one you already love.

My favorites are the Ghirardelli and Hershey’s mixes from Costco, Sam’s Club or Amazon because they come in larger boxes and consistently turn out great.

You can absolutely use individual boxes from the grocery store too—I just recommend sticking with a name brand.

Use Two Boxes, Not One

This recipe is intentionally written using two brownie mix boxes. If you’re buying the big box from Costco or Sam’s Club, that just means using two of the brownie mix bags inside.

It makes thicker, fudgier brownies with the perfect center-to-edge ratio. That’s the whole reason I started making them this way years ago. Before I started buying the Costco boxes, I’d sometimes even use two different brownie mixes together. 😂

Honestly… I wouldn’t go back.

If you only use one box, they’ll still taste great… they just won’t have that thick, bakery-style texture I’m after.

Easy Brownie Variations

One of the reasons I love this recipe is how easy it is to customize. Once you’ve mastered the base recipe, you can have fun changing it up depending on the season or whatever you have in the pantry.

How to Store Brownies

Store your brownies right in the pan covered with aluminum foil. That’s usually what I do… mostly because they don’t last long enough to need anything fancier. 😂

If you want to pack them for lunches or freeze a few for later, you can also cut them into individual squares and store them in an airtight container or zip-top bag.

What makes brownies fudgy instead of cakey?

Fudgy brownies have a little more fat, a little less flour, and are baked for less time than cakey brownies. That’s why I swap the oil for butter and always pull them out before the toothpick comes out completely clean.  

Can I freeze brownies?

Absolutely! Just wrap them tightly and freeze for up to three months.

That said… I’ve personally never had any left to freeze. They usually disappear within a day or two at my house. 😂

Why did my brownies turn dry?

They were probably baked a little too long.

Start checking them at the lowest baking time listed on the box. If you want fudgy brownies, the toothpick should come out with a few moist crumbs—not completely clean.

Should brownies still jiggle in the center?

No. The center shouldn’t jiggle.

Even if you’re aiming for fudgy brownies, the batter should be set. The easiest way to check is with a toothpick. If it comes out with a few moist crumbs, they’re ready. If it comes out with wet batter, they need a few more minutes.

Can I add chocolate chips?

Absolutely! Chocolate chips are my favorite mix-in.

This batch actually had about ¼ bag of butterscotch chips because that’s what I had left in the pantry. Why not?

(Well… technically it was closer to ¼ bag because I kept sneaking a handful while I was baking. 🤍)

Can I use one brownie box instead of two?

You can, and they’ll still taste great.

But this recipe was intentionally developed using two brownie mix boxes (or two bags from the Costco or Sam’s Club box) because that’s what creates the thick, fudgy brownie recipe I love.

If you use one box, you’ll end up with thinner brownies that bake a little differently.

  • Preheat your oven to 325°F. Spray a 13×9-inch baking pan with cooking spray and set aside.
  • Mix the batter. Pour both brownie mix bags into a large mixing bowl. Add the melted butter, milk, and eggs.
  • Stir until combined. Start mixing slowly so you don’t end up with brownie mix all over your kitchen. Once the batter starts coming together, you can mix more vigorously. Be sure to scrape the bottom and sides of the bowl so there aren’t any dry pockets of brownie mix hiding underneath.
  • Fold in your mix-ins. Gently stir in chocolate chips or any other mix-ins you’d like to use.
  • Transfer to the pan. Pour the batter into your prepared baking dish. If you’re using mix-ins, sprinkle a few extra on top before baking for that bakery-style look.
  • Bake for about 50 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs. It shouldn’t come out with wet batter, but it doesn’t need to be perfectly clean either. Every oven is a little different, so start checking at the lower end of the baking time and add a few extra minutes if needed.
  • Cool before slicing. Let the brownies cool for at least 10–15 minutes before cutting. They’ll slice more cleanly the longer they cool—but if you’re anything like my family, someone will be grabbing a warm brownie long before then. 🤍
